Abstract

With the opening of international market and the enhancement of people’s living standards, the safety and nutrition of wheat flour and foods became more and more important. Dispite of the different opinions people held on the advantages and disadvantages of BPO, genetic breeding is the essential way to improve flour whiteness. Shannong youmai 3 is bred by using flour whiteness as breeding target . It is the first high-white cultivar released in China. It can yield high-white flour with no addition of BPO and can also be used to adjust flour whiteness by mixing with other flour. The exploitation of it is promising.
