Abstract

The property of polyphenol oxidase (PPO) in jujube cultivars ‘Dongzao’ was studied, including phenols, specificity on substrates of PPO and effects of pH and concentration of substrate on PPO activity. It was showed the Dongzao jujube cultivar had an optimum pH range,the value is 7.0. The optimum native substrate of PPO in ‘Dongzao’ was gallate.
