Diversification of the Phenols Contents in Walnuts Fruits

Abstract

The change of the phenols contents in walnuts fruits was studied by spectrophotometric method.The result of the study showed :①The phenols contents in walnuts fruits were very high. ②the phenols contents of the outermost green peels in walnuts fruits were significantly lower than ones of the peels of the seeds. That is . The average contents of phenols were 122.6mg/g D.Wt and 384.4mg/g D.Wt respectively. ③ The higher level of the phenols contents in the peels of the seeds affected walnut fruits quality.
