Abstract

The effects of hypobaric treatment on respiration、CAT activity、MDA content、the relative conductivity、Vc content and pulp firmness of Chinese Jujube Lizao were studied. The results showed that hypobaric treatment reduced respiration, significantly remained CAT activity, slowed down the increase of MDA content, reduced the relative conductivity markedly, significantly kept pulp firmness and Vc content, so delayed maturity and senescence of fruit.
