
Analysis of Microchemical Characterisation of Oriental River Prawns (Macrobrachium nipponense) from Different Origins

Analysis of Microchemical Characterisation of Oriental River Prawns (Macrobrachium nipponense) from Different Origins
The study aims to understand the content of mineral elements in the edible portion of oriental river prawns (Macrobrachium nipponense) from different cultured and wild origins, to further explore the nutritional quality of oriental river prawns from different origins and the possibilities of mineral elements and stable isotopes for determining the origin of oriental river prawns. This paper selected samples from Yixing, Kunshan, and Shezhu culture origins and the Yangtze River wild oriental river prawns population for the study, and analyzed the content of 21 mineral elements using inductively coupled plasma mass spectrometry (ICP-MS). The results showed that each oriental river prawns contained not only the essential macronutrients Ca, Na, Mg and K, but also the essential trace elements Fe, Zn, Mn, Se and Cu. One-way analysis of variance showed that there were significant differences in the contents of various mineral elements in spring and autumn (P<0.05). The results of stepwise discrimination analysis based on mineral elements showed that the discrimination accuracy could reach 100% and 98.3% for spring and autumn oriental river prawns, respectively, while the C and N stable isotope ratios had the potential to differentiate between wild and farmed oriental river prawns. The results effectively confirmed that the oriental river prawns is a healthy aquatic product with high nutritional value, and that the microchemical ‘fingerprints’ have the potential to be used for origin traceability.

Geographical origin traceability is an important issue for controlling the quality of seafood and safeguarding the interest of consumers. In the present study, a new method of compound-specific isotope analysis (CSIA) of fatty acids was established to evaluate its applicability in establishing the origin traceability of Apostichopus japonicus in the coastal areas of China. Moreover, principal component analysis (PCA) and discriminant analysis (DA) were applied to distinguish between the origins of A. japonicus.The results show that the stable carbon isotope compositions of fatty acids of A. japonicus significantly differ in terms of both season and origin. They also indicate that the stable carbon isotope composition of fatty acids could effectively discriminate between the origins of A. japonicus, except for between Changhai Island and Zhangzi Island in the spring of 2016 because of geographical proximity or the similarity of food sources. The fatty acids that have the highest contribution to identifying the geographical origins of A. japonicus are C22:6n-3, C16:1n-7, C20:5n-3, C18:0 and C23:1n-9, when considering the fatty acid contents, the stable carbon isotope composition of fatty acids and the results of the PCA and DA.We conclude that CSIA of fatty acids, combined with multivariate statistical analysis such as PCA and DA, may be an effective tool for establishing the traceability of A. japonicus in the coastal areas of China. The relevant conclusions of the present study provide a new method for determining the traceability of seafood or other food products. © 2017 Society of Chemical Industry.© 2017 Society of Chemical Industry.

对3种放养处理[T1,与中华绒螯蟹(Eriocheir sinensis)和少量鱼类共养;T2,与沙塘鳢(Odontobutis obscura)共养;T3,与鳙(Aristichthys nobilis)共养]条件下日本沼虾(Macrobrachium nipponense)虾体的生长性状和肌肉营养成分进行分析与比较,以期为淡水经济虾类养殖模式的优化提供参考。结果发现:日本沼虾的全长、头胸甲长、体长和体重在不同放养模式下差异显著(P<0.05),肌肉中的粗蛋白、粗脂肪、粗灰分和水分含量分别为16.54%~17.97%、1.86%~2.25%、0.95%~1.12%和78.69%~80.56%,粗灰分含量在各处理间差异显著。共检出氨基酸17种,其中,必需氨基酸7种,必需氨基酸指数为70.88~73.13,不同处理间丙氨酸含量差异显著;共检出脂肪酸16种,不同处理间脂肪酸种类组成和C18:2 n-6、多不饱和脂肪酸的含量差异显著;检测的9种矿物质元素(Na、K、Ca、Mg、Fe、Cu、Zn、Mn、Cr)中,Na、Mn、Fe、Zn含量在不同处理间差异显著。研究表明,放养模式对日本沼虾的生长性状和肌肉营养具有显著影响,可能与不同放养结构和管理措施造成的养殖环境和食物资源差异有关,生产中需根据放养模式调节营养成分的添加。相较之下,日本沼虾与中华绒螯蟹和少量鱼类共养时,虾肉的鲜美程度、营养价值和保健价值相对更高,可选择该模式来改善养殖虾的营养品质。

为研究杂交青虾“太湖1号”在滨海型盐碱水域养殖条件下的营养特点,采用常规生化成分测定法测定了该杂交青虾肌肉中的营养成分,并与野生青虾的肌肉营养成分进行比较。结果显示,杂交青虾肌肉(鲜重)中蛋白质、脂肪、灰分、水分的含量分别为16.774%、0.927%、1.173%、81.367%;肌肉中共检测出18种氨基酸(总量为85.680%,干重),其中8种必需氨基酸占31.024%;肌肉中含12种脂肪酸,其中二十碳五烯酸(EPA)与二十二碳六烯酸(DHA)含量较高,二者含量之和为1.247%,多不饱和脂肪酸(PUFA)含量为1.753%;矿物元素种类丰富,常量元素中,钾含量最高(12.420 mg/g),微量元素中,锌含量最高(59.673 µg/g)。研究发现,杂交青虾“太湖1号”蛋白含量显著低于野生青虾(P<0.05),脂肪、EPA+DHA含量极显著高于野生青虾(P<0.01),氨基酸总量、非必需氨基酸总量、鲜味氨基酸总量与野生青虾无显著差异(P>0.05),必需氨基酸总量显著低于野生青虾(P<0.05),但二者氨基酸结构均符合FAO/WHO的标准要求。研究表明,滨海型盐碱水域养殖条件下的杂交青虾“太湖1号”氨基酸组成平衡,微量元素丰富,具有较高的营养价值。

Multi-element (H,C,N,S) stable isotope ratio analysis was tested for its suitability as a means for geographical provenance assignment of lamb meat from several European regions. The defatted dry matter (crude protein fraction) from lamb meat was found to be a suitable probe for "light" element stable isotope ratio analysis. Significant differences were observed between the multi-element isotope ratios of lamb samples from different regions. The mean hydrogen isotopic ratios of the defatted dry matter from lamb were found to be significantly correlated with the mean hydrogen isotopic ratios of precipitation and groundwater in the production regions. Carbon and nitrogen isotopic ratios were influenced by feeding practices and climate. Sulfur isotopic ratios were influenced by geographical location and surface geology of the production region. The results permitted differentiation of lamb meat, from most production regions, by inspection. However, more sophisticated evaluation of the data using multivariate methods, such as linear discriminant analysis, achieved 78% correct classification.
