This paper studies the variability, correlation coefficient and regression coefficient between farinogram parameters on three types wheat cultivars of Shaanxi Province in different location and different years. The results shows: the variability of Development Time, Stable Time, Softening of Dough and Farinogram Quality Number is absolutely higher than Valorimeter Value, and Valorimeter Value is absolutely higher than Water Absorption; the variability of the same farinogram parameters is different among cultivars; the variability of the different farinogram parameters of several cultivars is rather high in different locations and different years, but it isn’t at variation significance levels ;most of the correlation coefficient and regression coefficient between the farinogram parameters reach absolutely significance levels .From above on ,we may get a conclusion which farinogram parameters is decided by genetic factors.
