Advance in the Study of Nitrate and Nitrite Determination in Vegetables

Abstract

The progresses on study of the method for nitrate and nitrite determination in vegetables are reviewed with 31 references. The mechanisms of determination, quantitative analysis and effect factors are discussed. The results show that ion chromatography seems to be one of the most effective and simple to determine nitrite and nitrate in vegetables owing to its high sensitivity, selectivity, rapidity and simplicity coupled with the advantage of simultaneous determinations.
